4/16/92 is a throwback favorite. Trey uses volume swells to create a nice effect, and his "machine gun" playing style in the early 90's was well suited to 'Paug.
12/31/97 is also crazy. I love all the breakdown solos, and Trey's comments toward the end. I imagine what it would have sounded like if Trey had the band drop out, and have the entire MSG crowd sing the closing chorus, before they came back in to finish it.

Start-stop jamming, following a ferocious 2001 > Mike's. This is one of the only AUD's I'll still listen to.
It's got to be 12/31/95. The second half of that jam, when Trey gets back on the guitar after the drum kit defines what Phish is to me.
I'd also like to say Gorge 7/17/98. It's just... fast.One of my favorite sets to listen to, except for Character Zero
