They seem like a really laid back company and promote from within. They don't hire corporate managers etc. I am very excited. I have been in this business for 16 years and it can be very hard to find a company with this philosophy... which is why I have mostly avoided corporate restaurants. However, manager's in mom and pop type places (which is where I have always worked) are mostly "lifers." There is no room to grow in that kind of company.
Karl Strauss is offering me benefits, vacation time, and sick days. All things that don't normally exist in the service industry. Woot!

That is amazing news.. In a tough economy it is good to know that a capable young man like yourself can not only get a job with a successful local company, but also find work doing something you love. I'd love to learn how to brew my own beer.Well........ my new neighbor is an engineer at Stone Brewing Company which makes some of my favorite beers. The cool thing about Stone is that they encourage ALL their employees to brew at home and bring samples to work. They also have a special part of the brewery where ANYONE can brew a large batch (larger than at home anyway). The point is, we are going to start home brewing together as a joint project. Maybe once we get all set up and start actually doing it you should come down and check it out. Shit, maybe you can give us pointers for good brews to use in your cooking?

Also, I trust your epicurean sensibilities as I know the establishment in which you used to tend bar and you also know your chocolate!! The "medicine" that you suggested to me a while back is fantastic, both in effectiveness and taste. I had only had the double strength dark chocolate bar.. Which was great.. But I just got my hands on this (triple strength)...

.. and WOW is all I got to say. I am "afloat upon a wave right now" and I'm not Prince Caspian.Yes! Me too. We call it Bhangin' and it is the real deal! I had a piece of the double strength salted toffee today. Wonderful. The Triple is unreal though. You almost don't ever need anything stronger.
I also recommend Hubby's Chocolate for daytime use. Very mellow.
I'll have to give it a try when I'm in San Diego in two weeks, sounds good.
