I love chipotles.
Made some fish cakes with fresh Cod and leftover mash potatoes from Thanksgiving today. Killer herbs thrown in and bread crumb only on outside. Fried them up and served with chipotle mayo. More chipotle than mayo. Probably 80% chipotle and 20% mayo. It was amazing.
Think I'll go have another right now. Been contemptating making them into a sandwich with Thomas' English muffins and raw Spanish onion. Thin sliced. Extra mayo. I can't even put it on the sandwich when I make it. I bring the bowl of chipotle mayo to the table with me and spoon a bit onto each bite.

Here's my favorite grilled cheese sandwich, from the Greens Cookbook. Puree a can of chipotle in adobo sauce. Butter the outside of two pieces of good bread. Spread chipotle sauce on the inside of each slice, then layer cheese (fontina or cheddar), tomato, red onion, and lots of fresh cilantro. Grill in a skillet. simple and yum.

7 day old mashed potatoes?Well... 6 days at that point. We made a ton and I had a very tightly sealed container left over with no air in it. It was still good.

I agree with the chipotle heat. It hits at first, then it is all flavor. I can't get enough. Literally was spooning the shit on to these cakes.
I'm still confused whether this thread is about Chipotle or chipotle.It's about chipotle. I am not a fan of fast food. Although, this bar I used to frequent in Florida would have free food from Chipotle during football games. It was okay. Lacked something though. Like seasoning/spice/herbs.
I did Phish tacos with Mahi Mahi, my new chipotle mayo, shredded cabbage and a funky raddish salsa I made. Not sure I will do the faddish sales next time. It just isn't needed. Maybe add some raw onion though. Damn that sounds good.
