Sierra Nevada extract clone advice

Just got back from homebrew store to get supplies for a sierra Nevada clone. This will be my 2nd batch I have done so I still have a lot of questions about the process.

The ingredients I was given were:
3lb can of muntons premium bitter kit
3lb plain amber spray malt extract
2 oz of cascade hops

According to muntons directions it says to add syrup to the fermenter w both boiling and cold water, but I was assuming to add the syrup and dry malt to create wort and add 1 oz of hops 20 mins into boil and 1 oz of hops with 7 mins left to boil.

I am trying to figure out the best process with ingredients I purchased.

JayDubya You really should be consulting a homebrew forum rather than a Phish forum. I cut my homebrew teeth on this one. But here is another great homebrew forum.

I would also suggest purchasing a few kits from either Northern Brewer or Midwest Supplies before continuing to support your Local Homebrew Shop (LHBS). You should continue to support your local shop, because they're great to have around, but you'll get detailed instructions with your ingredients from the two stores I mentioned.

Some questions. How big of a brew kettle do you have and are you using your kitchen stove for brewing?

Answer those and I'll get back to you with how to brew.

i have a 20 quart stainless steel kettle, and 5 gallon fermenting plastic bucket. i am using a gas kitchen stove for brewing.

Yes, the recipe does need more hops. Unless you're going to get more hops, here's what I'd do with what you've got.

Add your Malt Extract to your kettle with 4 gallons of water. Bring to a boil and add an ounce of Cascade. Boil for 45 minutes and add 1/2 an ounce of Cascade. Boil for 15 more minutes and turn the heat off while adding your final 1/2 ounce of cascade.

Cool the wort as quickly as you can. In an ice bath in the sink or tub. While your waiting two hours for it to cool, get online and buy yourself a wort chiller if you don't have one. If you have one, use it.

Add the cooled wort to your SANITIZED bucket. Top it up to 5 gallons with tap water, inoculate with yeast and seal it up.

it takes you 2 hours to cool a batch in a ice bath? I can do it around 15 minutes, but use a good amount of ice and I also santize some tupperware containers and make ice in those, then just add into the kettle when cooling

but I do want a wort chiller

I was being slightly facetious, but it does take a long time. A wort chiller is one of the best pieces of equipment a homebrewer can own.

joonze go to the local home improvement store and buy a roll of copper tubing and some vinyl hose and make your own chiller for 1/2 the price....
I believe this "3lb can of muntons premium bitter kit" is pre-hopped.... read the can to see if hops have been used in the extract...

joonze, there is hops added to the bitter kit.
