Dakar is West African headquarters for countless of NGOs and a major UN agencies. The food truck is primarily aimed at the thousands of expats who live and work here and have a difficult time finding lunch — but here's the thing: we'll be using ingredients and supplies sourced from local, sustainable suppliers. We have several Senegalese team members, we'll be employing many more, and we'll be helping to sustain the farmers where we get our ingredients.

Senegal has *great* fresh food and ingredients, but in the city, you get the same few dishes over and over again. Much of what people eat here is re-imported at outrageous prices. By encouraging sustainable local agriculture, we're showing that you can make varied, delicious food from local ingredients without buying from overseas, something that's still left over from colonial times.

We're not trying to scam anyone, we're trying to start a business that would benefit everyone here. We're in touch with coconut supplies, local coffee roasters, organic vegetable farms, a monastery that produces goat cheese, eco lodges, a newly founded farmer's market, spice importers, juice manufacturers, sustainable forestry programs, and even Dakar's first cupcake shop — all local business, many of them Senegalese run and owned, that would benefit directly if this truck took off.
